The Classic Method of Casaleta is a sparkling wine of great freshness and delicacy that originates in the Ancona area from old biotypes of Verdicchio grapes. After aging on the lees for 24 to 36 months, it tells the story with notes of citrus, dried fruit, spring flowers, and memories of bread crust. The sip is lean and creamy, with great tension and a pleasant bitter note.

The Classic Method of the Casaleta Winery confirms the potential of Verdicchio also in the sparkling wine field: a variety with pronounced characteristics of freshness and persistent minerality practically lends itself spontaneously to the creation of balanced and tasty bubbles. The low alcohol content is an additional advantage for enhancing a sharp and pleasantly aromatic profile.

Casaleta produces its Classic Method from Verdicchio grapes of ancient local biotypes vinified in purity, coming from plants that have reached the venerable age of 70 years. They are cultivated in the inland region of Marche in the province of Ancona, within the area of the Castelli di Jesi: the vineyard of Castiglioni di Arcevia stretches for about 6 hectares along the slopes that reach an altitude of 350 meters above sea level, surrounded by lush woods and under the beneficial influence of the constant breezes coming from the Adriatic. The north-northeast exposure benefits the grapes from a rather cool microclimate and heralds important temperature variations for development.aromatic, while the soils are characterized by a composition of clays and sand. The harvest is manual, as are all vineyard operations. The soft pressing of whole bunches occurs under vacuum conditions, followed by cold static decantation of the must and temperature-controlled fermentation in stainless steel tanks. The base is bottled for the second fermentation and the aging on the lees lasts for 24 months: after the riddling and disgorging operations, the Extra Brut rests in the cellar for a period of 8 months.

The Classic Method of Casaleta offers a view of pale yellow tones, crowned by an effervescence of extreme finesse and persistence. The aromas it releases are varied and intense: floral notes that open to a white-fleshed and citrus fruit part, spicy hints of anise, fresh vegetal tones, vanilla. The sip is a coherent echo of these aromatic sensations, with a pronounced mineral and acidic presence on the palate, without lacking a delicate almost chalky softness. From shellfish to fresh tagliatelle with fish ragù, the pairings are numerous.
