The Sparkling Classic Method from Casa Setaro is a fresh and mineral bubble, obtained from an indigenous grape grown exclusively on Vesuvius, the Caprettone. The 30 months of aging on the lees allow for the development of fragrant aromas of nuts, bread crust, and citrus. The taste is decidedly mineral, fresh, and of delicate finesse, enlivened by an elegant and continuous perlage.

The Classic Method Caprettone “Pietrafumante” from the Casa Setaro winery is a mineral and very interesting sparkling wine produced in the Alto Tirone area, in the Vesuvius National Park, right at the foot of this incredible volcano. The “Pietrafumante” is a Vintage sparkling wine made from pure Caprettone grapes, an indigenous variety with unique characteristics grown exclusively in this area. The vines, which are about 15-25 years old, are cultivated using the Guyot method on volcanic soils rich in potassium and microelements, at an altitude of about 350 meters. The winery, located in Trecase in the province of Naples, is a small family-run business that respects the nature of the surrounding landscape by treating its vineyards in the most respectful way possible.

The Caprettone “Pietrafumante” is produced with hand-harvested grapes in small crates and selected in the winery to ensure the highest quality. The chosen bunches undergo a cryomaceration process in silos at a temperature of about 4 degrees. Then, the pressing takes place to obtain the free-run must, which is fermented for a period of 18/24 days in stainless steel containers at controlled temperature. At the end of fermentation, the base wine is added with liquer de tirage for the sparkling process, followed by a second fermentation in the bottle on its own yeasts for about 30 months. After its aging, it is disgorged to allow the removal of the yeasts and re-bottled with the addition of liquer de tirage.

The “Pietrafumante” sparkling wine presents itself with a bright straw yellow color with greenish reflections and a fine, persistent perlage. On the nose, it releases elegant notes of white-fleshed fruit, citrus, and white flowers, including broom, with hints of fragrant bread notes. On the palate, it is full and characterized by great minerality and freshness, perfectly supported by good complexity and structure. This bubble from Casa Setaro is a very particular and pleasant expression to drink that is well suited for a summer dinner in company.
