Paglione’s ‘Mania’ is a rosé born from an unusual blend that, taken together, imparts an informal and distinctly Mediterranean character. The name evokes the ‘mania’ described by the philosopher Karl Jaspers, namely the primal euphoria in which the world appears bathed in a rosy light. The wine is artisanal, with a short maceration on the skins, and is neither filtered nor stabilised. On the nose, it opens with notes of cherry, with a spicy base and a very fragrant floral touch. On the palate, it is fresh, with a fine balance between savouriness, structure and roundness, and a persistent, smooth finish. It pairs well with summer cuisine and traditional Apulian dishes, particularly orecchiette with lamb ragout
